As twilight settled over Ljubljana and the city's red rooftops began to glow beneath us, we boarded the funicular to Ljubljana Castle. Dating back to at least the 11th century, the castle has watched over Slovenia's capital for centuries, and from its hilltop perch the panoramic views stretch across the city's terracotta rooftops to the distant Julian Alps. Behind its medieval stone walls awaited Gostilna na Gradu, where history, hospitality and contemporary Slovenian cuisine come together to create one of the country's most memorable dining experiences.

The castle walls glowed softly in the fading light, creating an atmosphere that was both romantic and relaxed. Dining within such an iconic landmark was unforgettable, but what truly elevated the evening was the warmth and professionalism of the staff. Our waiter was exceptionally knowledgeable, guiding us through the tasting menu with genuine enthusiasm while sharing the stories behind the local ingredients and culinary traditions.

Slovenian cuisine draws inspiration from its neighbours—Italy, Austria and Hungary—yet proudly retains its own identity. At Gostilna na Gradu those influences appeared on every plate, interpreted with contemporary flair and a deep respect for seasonal local produce.

One aspect that impressed me most was the restaurant's thoughtful approach to dietary requirements. As someone who spends a great deal of time researching restaurants before travelling, being able to relax and simply enjoy the evening without worrying about gluten felt like a luxury in itself. The kitchen prepared an entirely gluten-free five-course menu for me, while my husband enjoyed the standard tasting menu. Three of the five courses were thoughtfully adapted so I could experience the same flavours without compromise—an attention to detail that is still surprisingly rare.

The evening began with a beautifully balanced amuse-bouche of speck, olive and mustard seeds, followed by a delicate duck liver pâté paired with sweet-and-sour pickled cucumber. It was an elegant introduction that hinted at the creativity still to come.

Our first official course featured veal tartare topped with crispy potato strings, chive oil and fish skin powder. Every bite showcased the kitchen's ability to combine traditional Slovenian ingredients with modern techniques. The contrast between the silky veal and the crisp potato created a dish that was both refined and deeply satisfying.

The highlight for my husband arrived with the cuttlefish tortellini stuffed with smoked trout, accompanied by fennel cream, horseradish foam and herb oil. He described it as one of the finest pasta dishes he had ever tasted. Rich yet delicate, each element complemented the next without overwhelming the natural flavours of the seafood.

For me, however, the true star of the evening was the ostrich. I had never expected the finest dish of my Slovenian holiday to be ostrich. Tender enough to cut with the side of a fork, its delicate flavour sat somewhere between premium beef and venison without the heaviness of either. Served with smoked cauliflower purée, pear gel, roasted hazelnuts and a silky demi-glace, every element worked in perfect harmony. It completely changed my perception of ostrich meat and remains one of the most memorable dishes I have enjoyed during my travels.

Dessert provided a refreshing finale. My gluten-free creation combined Greek yoghurt infused with lime, coconut meringue, coconut ice cream, lemongrass gel, coconut crumble and lemon oil. Light, vibrant and beautifully presented, it struck a perfect balance between citrus freshness and tropical sweetness. My husband finished with an equally imaginative dessert of peanut cream, roasted banana ice cream, buckwheat popcorn, pickled raspberries and dark chocolate soil, bringing the tasting menu to a fitting close.

After dinner, we wandered through the castle grounds before pausing at the viewing terrace. Ljubljana sparkled beneath us, church spires pierced the evening skyline and the city's quiet beauty seemed even more enchanting from above.

Long after the final spoonful of dessert, it wasn't a single dish I remembered most, but the feeling of dining beneath centuries-old stone walls while Ljubljana glittered below. Gostilna na Gradu captures everything that makes Slovenia so rewarding to explore: warm hospitality, remarkable local produce and unforgettable views. It isn't simply dinner in a castle—it is one of those rare travel experiences that lingers long after the journey home.
